BREWING PROCESS

The process? Good things take time—and rice. Lots of it. Soak the rice. Drain it. Then steam it. Cool it down. Mix it with nuruk(a wild fermentation starter), then wait as it slowly transforms.
The result? Deep, funky, earthy, and full of character. A drink that’s as complex as the culture behind it.

WASHING

The washed rice is soakedin
water for 1.5 to 2 hours.

Draining

The soaked rice is drained in a sieve for 30 to 40 minutes.

Steaming

The drained rice is steamed for about 1 hour.

Cooling

The steamed rice is cooled down to 25°C (77°F).

Mixing

The cooled rice is mixed with water and nuruk (fermentation starter).

a clean, and consistent taste.
